About this deal

Palate: Pedro Ximénez (or PX) is a white Spanish grape varietal most commonly used in an intensely sweet dessert wine. The PX influence in this case results in a relatively easy-going bourbon. Ultimately, the sherry-cask sweetness covers too much of the traditional bourbon flavor for me. The cask finishing is stronger than you’d expect (as it was with the nose), but the effect isn’t the same in the mouth. The wheat content and cask finishing combine to bring the sherry to the forefront.

But for now we’re looking at this bourbon review. A bourbon with corn and three types of malt. Malt that makes up an astonishing 30% of the total mash. Not something you drink every day, but I’m excited to do so now.

The word malt in the (Irish) Scotch whiskey world is in the phrase single malt, which only actually applies to scotch whiskey. Single malt has legal requirements for its usage in Scotland, just as bourbon does in the U.S. What single malt means in a general sense is that it is only produced, aged, and bottled in a single distillery using barley as the main malted grain, if not the only one. Terms like double and triple have also been used casually in the Scotch world to describe blends from precisely two or three distilleries, respectively.

An Unmistakably Balanced Expression.

In their desire to keep things local, Rabbit Hole “enlisted the help of fourth-generation craftsman at Vendome Copper & Brass Works to build a 24-inch column still and other distillation equipment.” How to score this? It’s less differentiated – though slightly less expensive – than the bourbon. I could be really crabby and shave two points off the middle of the range, but this feels excessively punitive. Bestowing a below-average score should be enough to communicate that I wouldn’t recommend buying this at SRP. Score: 4/10 This brings me to Rabbit Hole. Any of you who have had the pleasure of flying into Louisville will have noticed the several enormous Rabbit Hole advertisements covering the support columns in the terminal. If you’ve stayed in the trendy NuLu neighborhood (as the East Market District has been rechristened), you might have even strolled by the very design-y Rabbit Hole distillery, as I did the last time I was in town.
